Introducing…corn

Well, my plan for today is to try some corn.  My son Daniel is coming over for dinner and since Meghan and Jacob are both living here now, it looks to be a family gathering!  On the menu; chicken enchiladas.

As my guide I’m using Karina’s Sour Cream Chicken Enchilada and also her Chicken and Artichoke Bake. There are still things in the recipes to change as I am still not doing citrus or dairy.  Oh, I miss my cheese and sour cream!  I looked at the vegan sour cream at Fresh Abundance this morning and I couldn’t really figure out what it was made of.  Non-hydrogenated oil…of some sort. Fine…I’ll skip it.  I know I’m only supposed to introduce one food at a time onto the Eat list, but I’m still putting some mild green chilies into the enchiladas.

Ooooh…how daring!
